I've heard they help with night vision or seeing in the dark. I don't know if the carrots actually improve eyesight or if they just keep it from going... |

As mentioned elsewhere it was British propaganda used during WWII. The British had decoded the German Enigma encryption system and often knew their military movements. However, the British didn't want the Germans knowing that they had this tactical advantage (incase the Germans changed their encryption system) so they used the carrot story as cover for why British planes and warships sometimes turned up out of nowhere at the right place and time to thwart a German operation. Raw and lightly cooked carrots are a good source of vitamins, but like most vegetables lose their nutrient value if boiled. |

Look at it this way, though...even if that's actually not the case, there are still other valuable vitamins in carrots that are good for other things, and it's impossible to overdose on them. |
